King Trumpets are the meat and potatoes of the edible mushroom world. They are large, succulent, hold up well to an array of cooking styles including grilling, sautéing, and roasting. The thick stems are tender and delicious. Cross cut the stems into rounds to make an ingredient similar to bay scallops, or slice them length wise and sear them in a hot pan with butter, fresh thyme, and garlic.
Unlike other mushroom species, the water content in King Trumpets is minimal. The mushrooms don’t lose as much of their weight or size after cooking as other varieties of oyster mushrooms.
Though North Spore cultivates King Trumpet and produces King spawn for other farms and growers, our cultivation of this species is limited due to space constraints. Some of our supply for Farm Drop comes from a partner organic mushroom farm who we trust and believe produces amazing King Trumpet mushrooms.
