In April, Portland celebrated it’s inaugural SEAWEED WEEK and restaurants all over town showcased dishes featuring sea vegetables! We were asked by Dobra Tea to make a special seaweed soup they could feature on their menu, and we liked it so much we decided to make it again! It’s got a vegan, kombu-based broth and is loaded with local spring veggies, including snap peas, pak choi, green onions, mushrooms, and dulse! Can be enjoyed hot or cold.

Ingredients: Kelp, Toasted Sesame Oil, Onion, Celery, Garlic, Ginger, Carrots, Sugar Snap Peas, North Spore Chanterelle Mushrooms, Pak Choi, Scallions, Dulse, Kosher Salt, Pepper
